Premium Cabernet Sauvignon

Cabernet Sauvignon is a speciality of Helm Wines and the Canberra
District is perfectly suited to growing this wonderful variety.
Helm Wines has been successfully making cabernet sauvignon and
cabernet blends since 1979 and has attracted numerous wine show
awards and favourable critic reviews. The Canberra District region has
similarities to Bordeaux and is influenced by evening easterly winds in
summer (known as Batemans breath) which ensure cool nights and
bring a hint of salt from the ocean (at Batemans Bay).

The Grapes
The Season started with record rains. Canberra recorded its third wettest winter on record and the rains continued into spring. Helm Cabernet is
grown without any supplementary water, as natural rainfall dictates the quantity of crop. Summer was hot and dry, with the second hottest
summer on record. Harvest saw the return to our typical autumn, cool
nights and hot days, perfect for premium cabernet fruit production,
another high quality season ,which makes it three in a row.

The Wine
The deep red hue is typical of Cabernet from the Canberra District, with a rich berry and spicy bouquet. An outstanding wine of soft tannins, rich
dark fruit and cherry palate with balanced oak tannins. After cold
soaking and 25% whole bunch fermentation, it is a selection of the best
casks over two years in French oak.
